There are so many wonderful cookies recipes!! Christmas is the time of year I do most of my baking. When my son was younger we would bake cookies together.
One of my favorite recipes is for Cranberry Oatmeal Cookies.
I start with a traditional oatmeal cookie recipe ~
1 cup salted butter
2 cups packed brown sugar
2 teaspoons vanilla extract
1 1/2 cups flour
1 teaspoon salt
1/2 baking soda
3 cups good quality old fashioned oats
3/4 cup craisins
1/2 cup pecans
Cream together butter and brown sugar until they are fluffy. Add vanilla extract. Mix in eggs. In another bowl, combine flour, salt and baking soda. Add this to the butter mixture, then stir in 3 cups old-fashioned oats, craisins and pecans.
Form cookies on a lightly greased baking sheet, and bake them at 350 degrees Fahrenheit for 12 to 13 minutes. For easier cleanup line baking sheet with foil and grease the foil. Enjoy.
